Soft Serve and Ghost Hunters

There is nothing like a good waffle bowl filled with homemade chocolate soft serve ice cream.  Mom and Dad bought a machine for themselves for Christmas and since then, I have been reaping the benefits.  It is the most amazing soft serve ice cream that I have ever tasted (yes...even better than Dairy Queen).  What is so amazing about it is that you can make, not only ice cream, but also yogurt and sherbet.  Cuisinart makes some amazing products such as the said ice cream maker found here.

Ghost Hunters is pretty amazing too.

Hello everyone! 

Today was definitely filled with adventure.  I woke early to appear at my hearing.  I feel that it went well, so we shall see in a couple weeks.  I was able to get 2 out of the 5 books that I need for my classes.  Just for two small books, it was $265!!!  WOW!!!  Thank you financial aid! 

My wedding planner met with the various representatives at the venues we hope to use for the ceremony and reception.  The ballroom is AMAZING!  I am so excited about having the reception there, although I am not too excited about the church.  Mainly due to the sanctuary being a double aisle.  There is a chapel on site to use that is beautiful, but it doesn't hold as many people as we would hope.  It depends on the numbers.  We are considering another location, but do not know pricing as of yet. 

I have, however, considered a possible job opportunity.  I am currently eligible to apply for an internship with Microsoft in their Financial department.  This would mean having to move from North Carolina to Seattle, Washington, but I feel it would be an AMAZING opportunity and a wonderful learning experience.  I have to get my stuff straight here first before I chance such an endeavor.  It is a dream though...

Anyone have crazy dreams like mine that they want to accomplish?

2012 Already?!?!

I can't believe how fast 2011 went by!  As I sit in bed and reflect on the previous year, I can not believe how much stuff I experienced.  I moved to New Jersey and back, beat cancer, and became engaged to the most wonderful man alive!  Only three things listed, but these were the major events that trademark 2011 for me. 

I look ahead at the events coming soon.  Now that the cancer is gone, I only have check-ups every 6-8 weeks for now.  I am also currently working on planning the wedding now that the holidays are over with, and I have started back to college!  The hub2be is researching apartments near him so that we will be ready to move when tax returns arrive.

I really am looking forward to this year.  It is sure to be filled with excitement and craziness!  I don't like to set "resolutions," but I have set some personal goals for myself.  I MUST lose the weight that I gained during chemotherapy...if not for the wedding (already got my dress!!!), then for health reasons.  I have no excuse!  My other goal that I set for myself is to finish projects that I have been wanting to complete before starting several other projects that I have planned for myself in the near future.  It seems that I always pile on more projects before finishing ones that I already started.  This has to change or I will just end up with a bunch of disappointment and a pile of stuff left unfinished.  One thing at a time.

Tomorrow (technically today since it is past 2:30am), I have three things that must be accomplished.  I must get my books from the college, apply for student loans (the last of which I hope!!!), and successfully appeal my Medicaid and temporary disability claim that the state denied me for (said the type of cancer I had was curable and not deemed as a disability). 

I hope that 2012 brings the positivity that I have been looking for.  It is much needed and would help so much.  Happy New Year everyone!
